Sets a Pace for a Scene
The music slowly builds up to built tension as you see them get ready for battle so the audience knows how to feel about the scene. When it shows the woman and hobbit, the soundtrack goes silent to show the tension and emotion they are feeling about the battle. As they charge at the orcs, the music picks up until they finally reach each other and it continues to be a triumphant tune to show that the orcs haven't slowed them down.
Establish an atmosphere/mood
As the film shows close ups of the characters faces, the music helps show that they are feeling worried about the upcoming battle. The horns and drums used when both sides are showing up are also commonly associated with war.
Entice the imagenation
Sounds are added for things like arrows hitting to swords slicing the orcs. While these aren't sounds you'd hear in real life, they help make the scene feel more real. They have also created sound effects for the dragons for the sounds they make and the sound their wings make as they fly off so that they seem more real.
The Score

This was used to make the beer pouring dramatic and to show the water order as the odd one out.
Dialogue or ADR
Garry King talks to the landlord about what beer he has on tap and tries to ask about it. This demonstrates Garry's personality and leads to the reveal that one of this friends isn't planning on drinking beer during their pub crawl.
